Guiltless Hot Cocoa

Yummmmy

Ingredients

1 cup unsweetened almond milk

1.5 tablespoons cocoa powder

1 tablespoon of honey

Heat everything up in a saucepan, enjoy 🙂

total calories: 120

Pretty much the healthiest you’ll get in terms of hot chocolate. delish!

Veggie and Cumin Soup

Ingredients

  • one chopped onion
  • 2 teaspoons of minced garlic
  • two chopped carrots
  • two-three large sliced bell peppers
  • One large can of diced tomatoes, with liquid.
  • 2 Tablespoons of ground cumin
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
Directions
  • heat a large pan with about 2 tablespoons of cooking oil (medium heat)
  • cook onion and garlic until just warmed through.
  • Add carrots.
  • Around 4-5 minutes later, add peppers
  • Cook until the carrots are soft.
  • Add the tomatoes and their liquid, cook until everything is warmed through.
  • Add the spices, cook for 3-4 more minutes.
  • Blend until smooth.
I topped the bowl with some whole cumin seeds for some texture and extra flavor. Let me know what you think 🙂

Zigni with Ugali (traditional African Meal gone Veg)

Ugali: (corn mush, similar to grits with a thicker consistency)

Ingredients:

  • 1 Cup of fine-grind Cornmeal
  • 2 cups of water

Instructions:

  1. Combine in a pot on the stove
  2. Boil until the mixture has reached a thick consistency and will not slide out of the pot if you tip it.
Zigni: (a traditional spice stew)
Ingredients for stew:
  • 1 block of extra firm tofu
  • 1 large white onion
  • 2 bell peppers
  • 1 large can of crushed or diced tomatoes
Spice mix (berbere):
  • 1 tablespoon of paprika
  • 1 tablespoon of cayenne
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of allspice
  • 1/2 teaspoon of cloves
  • 1/2 teaspoon ground ginger
Instructions
  1. Pan fry onions with a bit of chopped garlic and oil. Add tofu and peppers, cook until peppers are soft and tofu is warmed through.
  2. Add 2 tablespoons of the spice mixture (less if you don’t want it too hot, more if you like some good heat. I used about 2 and 1/2 tablespoons, and I like good hot food)
  3. Mix it up, add the can of tomatoes.
  4. Let it simmer until it has reached your desired consistency, serve overtop of some ugali!!
Enjoy 🙂 This is a healthy, balanced, protein rich and low-fat meal. It’s also really filling and delish!!!!

Vegetarian Hot Wings!

AKA….Godly deliciousness.

Ingredients

  • 1 can of gluten tidbits or extra firm tofu, salted and peppered
  • 1/2 bottle Frank’s hot wing sauce
  • a few splashes of louisiana style hot sauce if that’s not hot enough for ya (it wasn’t for me)
  • 1 teaspoon of chili flakes
  • 2 teaspoons of cayenne powder
  • 1 tablespoon of honey

Instructions

  1. Preheat oven to 400F
  2. Mix together Sauce ingredients, and marinate gluten or tofu in the sauce for about 10 minutes.
  3. Take pieces out of the sauce and put them onto a tin-foiled baking sheet, saving extra sauce to use as a dipping sauce.
  4. Bake for about 15-20 minutes until sauce is hot and sticky and pieces are heated through.
  5. Remove from oven and enjoy with extra sauce if you so please!!

***Note***

If you follow that recipe exactly, they will be VERY HOT. Don’t follow it exactly, modify it to your own tastes if you don’t like HOT food as much as I do.

Prospective Fruit Popsicles

***Prospective because I have not actually made these yet, just kinda came up with the idea***

Ingredients

Frozen fruit (raspberries, blueberries, etc etc, whatever you like)

A banana

Water or orange juice if needed to thin out the consistancy

Blend it up, freeze in icecube tray with toothpicks sticking out, enjoy

***I will probably make these soon and add adjustments depending on how they turn out for me 🙂 ***

Blueberry Apple Crumble

Filling: Mix desired amount of frozen blueberries with one or two diced apples (it depends how much you’re making). Add about half a cup of flour (so it’s not super runny), and 1/4 cup of sugar, a sprinkle of cinnamon and nutmeg.

Topping: 1/2 a cup of flour, 1/2 a cup of oatmeal, 1/4 cup of sugar, 1/2 cup of melted margarine or butter. Mix it up.

Put the filling in a baking dish and spread the topping over it. Bake at 350F until topping is golden brown and filling is bubbly. Enjoy!

(PS, this is really yummy.)

Stuffed Pasta Shells

So yummy, so good for you!

Ingredients

  • 1 box of jumbo pasta shells
  • Assorted veggies (I used canned olives, mushrooms, peppers, tomatoes, garlic and onion, I also would recommend spinach)
  • Tomato sauce
  • Cheese (optional, don’t use too much!)

Cook pasta, Pan fry veggies together. Stuff shells with veggies, place in baking dish, cover with tomato sauce and sprinkle minimal cheese on top if desired.

Bake at 375F for 20-30 minutes until bubbly and hot

Enjoy with a leafy salad 🙂
